  • Take your pork roast out of the fridge and let it sit at room temperature for 30 minutes to an hour. Preheat oven to 300°F.
  • If your pork roast has a thick layer of fat on the outside, cut about half of it away so that it's a thinner layer. You can throw this out. Or, the best thing to do, is to turn it into a snack to have while your pork is roasting. Put the fat that you removed from the roast in a single layer on its own cake pan. Use a pan with edges because a lot of hot fatty liquid is going to come out of it. Season it lightly with salt. Roast the layer of fat in the 300F oven until it's brown and very crispy. Check it often. Blot it on kitchen towel. Break it into pieces and offer it as nibbles to anyone who is lured into your kitchen by the roasting pork smells.
  • Meanwhile, mix the pepper, garlic powder, and salt in a small bowl and then sprinkle liberally all over the roast.

  • Remove your roast from the packaging and pat dry with paper towel. With a small sharp knife, deeply score the rind at 1cm intervals, being careful to not cut into the meat.
  • When you're ready to cook, put your pork on a wire rack in the sink and pour a jug of boiling water over the rind. Pat dry thoroughly with paper towel.
  • Rub the roast with 1 tablespoon of vegetable oil and half a tablespoon of salt (more if you like salty crackling), making sure the oil and salt penetrate the scores.
  • Place the roast on a wire rack inside a baking tray and cook at 240°C (max 250°C conventional) until the rind crackles, up to 50 minutes. If the roast is over 2kg, take 10 minutes off this initial crackling time.
  • Turn the oven down to 180°C and cook for 30-35 minutes per kg, depending on how well you like your roast cooked.

  • Choose the best cut. Which pork joint you choose for roasting depends on personal taste. Pork leg and loin joints are excellent roasting joints with lean meat and good crackling, and a rack of pork is an impressive looking roast.
  • Choose your size. If possible, buy a slightly larger joint than you need, as large joints tend to shrink less in the oven, and you can always use the leftovers another time.
  • Getting ready to cook. If you're cooking a joint of pork with crackling, preparing the crackling begins as soon as you get it home. Take the joint out of any packaging and dry the joint thoroughly, taking extra care to get the rind completely dry.
  • Cooking times. Choose a roasting tin that's a little larger than the joint – not too large, or the precious gravy juices will evaporate. A peeled and halved onion added to the roasting tin while your pork cooks will caramelise and add flavour to the gravy.
  • Make sure it's cooked. When the cooking time is up, test to see if your pork is cooked by pushing a skewer into the thickest part of the meat. The juices should run completely clear, with no hint of pink.
  • Resting is important. Resting allows the juices in the outside of the meat to settle back into the middle and throughout the joint, making it juicier and easier to carve.
